Spicy Italian Sausage and Veggie Soup

This cozy bowl of winter soup is nutrient-dense and absolutely delicious! It's made with spicy Italian sausage, fresh herbs and vegetables, and rich chicken bone broth. This recipe will not disappoint! This recipe was created by our friend, Tory over at Nourishing The Glow.

Serves: 6

Ingredients: 

  • 3 tablespoons ghee 
  • 1/2 yellow onion, chopped 
  • 4 cloves garlic, minced 
  • 1 lb ground turkey 
  • 1 tsp dried parsley 
  • 1/2 tsp paprika 
  • 3/4 tsp salt 
  • 3/4 tsp pepper 
  • 1/4 tsp oregano 
  • 1/4 tsp fennel 
  • 1/4 tsp thyme 
  • 1 yellow squash, chopped 
  • 1 zucchini, chopped 
  • 1 cup carrots, chopped 
  • 2 stalks celery, chopped 
  • 15 oz can diced tomatoes 
  • 2 bags Bonafide Provisions Chicken Bone Broth 
  • 1/2 cup fresh parsley, chopped 
  • 1 bay leaf 
  • 2 heaping handfuls spinach 
  • Salt and pepper to taste 
  • Red pepper flakes, optional 

Directions: 

  1. Heat the ghee in a large pot over medium-high heat. Add the onions and garlic and sauté for 3 minutes. Add turkey and cook until lightly browned, about 4 minutes, breaking up the meat with the back of a spoon. Stir in all of the spices until well combined. 
  2. Now, add the squash, zucchini, carrots, and celery, stirring to combine with the turkey. Cook for 3 minutes. Add in the tomatoes, bone broth, parsley, and bay leaf. Stir until combined, cover and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes. *Add in spinach the last 5 minutes. 
  3. Garnish with fresh parsley and red pepper flakes. Serve and enjoy! 

*Store in the fridge for 6 days
