Paleo Mexican Shrimp Stir Fry
This paleo and keto-friendly shrimp stir fry is packed with flavor, nutrients, AND it's done in under 30 minutes! This is a perfect meal to meal prep for the week or to have on a busy weeknight. This recipe was created by our friend, Melissa over at Melissa’s Healthy Kitchen!
INGREDIENTS
- 1 lb wild-caught shrimp
- 1 Tbsp Fourth and Heart California garlic ghee
- 1/2 Tbsp Primal Palate meat and potato seasoning
- 2 cups riced cauliflower
- 2 red bell peppers, chopped
- 2 yellow bell peppers, chopped
- 1/3 cup onions, diced
- 1/2 cup cilantro, diced
- Salt and pepper to taste
- ¼ cup Bonafide Provisions Chicken Broth or Bonafide provisions chicken bone broth
DIRECTIONS
- Heat your ghee in a large stainless steel pan over medium-high heat
- Season shrimp with salt and pepper and cook for 2 minutes on each side
- Transfer shrimp to a dish, and set aside
- Add your onions, bell peppers, and a little bit more ghee and sauté for 5-8 minutes or until nice and caramelized
- Add your meat and potato seasoning, cauliflower rice, and bone broth. Mix until well combined and cook for additional 2-4 minutes
- Remove from heat and add the cilantro and cooked shrimp, stir until well combined.
