Instant Pot Cashew Chicken

How to make easy, healthy and nutritious cashew chicken in your Instant Pot! This recipe is so quick and easy, it will become a staple in your weekly routine. This recipe is made with our collagen-rich chicken bone broth that adds depth and richness to almost any dish! This recipe was created by our friend, Melissa over at Melissa’s Healthy Kitchen!

INGREDIENTS

  • 1.5 lbs. chopped chicken
  • 2 TBSP tapioca flour
  • 2 TBSP avocado oil
  • 1/2 cup coconut aminos
  • 2 TSP minced garlic
  • 1 1/2 TSP sesame oil
  • 1 TSP chili garlic sauce or sub red chili flakes
  • 1 cup Bonafide Provisions chicken bone broth
  • 1/2 cup cashews
  • 2 cups broccoli
  • 2 red bell peppers sliced
  • 2 TBSP Green onions

INSTRUCTIONS

  1. Set instant pot to sauté function and add avocado oil
  2. Coat your chicken with tapioca flour and season with salt and pepper
  3. Add chicken to the hot pot and brown a couple of minutes each side
  4. Add coconut aminos, chili sauce, minced garlic, sesame oil and sauté for a couple of minutes
  5. Add in bone broth, turn off the instant pot, cover, seal valve, set to manual high pressure for 5 minutes
  6. Let the pressure release on its own (10-12 minutes) open instant pot
  7. Add in chopped broccoli, red bell peppers, and set high-pressure high manual 2 minutes
  8. Quick-release of pressure open, add in cashews, top with green onions

If you don’t have an instant pot try cooking in:

  1. In your slow cooker: follow the directions below and cook for about 6-8 hours in your slow cooker
  2. In a large pan over stovetop: follow the directions below (minus the instant pot directions), you will cook your chicken in the pan for 5-7 minutes, then add the veggies, bone broth, and cover your pan. You may need to add in less bone broth if it has too much liquid just bring to high heat and cook until the liquid is absorbed.
