Dairy-Free Cauliflower Soup

INGREDIENTS 

  • 1 head cauliflower, broken into florets 
  • 1 large onion, chopped 
  • 3 cloves garlic, chopped 
  • 4 cups Bonafide Provisions Vegetable Broth 
  • 1 tablespoon fresh Thyme 
  • salt and ground black pepper to taste 

 

INSTRUCTIONS 

  1. Preheat oven to 400 degrees. 
  2. Prepare cauliflower head by cutting off the florets. Lay across a baking pan and drizzle olive oil on top and lightly season with salt. 
  3.  Let cauliflower roast in oven until slightly browned, 20 to 30 minutes. 
  4.  Heat oil in a large soup pot over medium heat. Add onion and sauté until translucent, about 5 minutes. Stir in roasted cauliflower, thyme and garlic. Add Bonafide Provisions Vegetable Broth, season with salt and pepper, and simmer until all vegetables are tender, about 10 minutes. Purée soup with an immersion blender until smooth.
