This gluten-free pasta primavera from Feel Good Foods is definitely a keeper. Quick, easy, nourishing AND delicious – this dish makes an awesome mid-week meal when you’re short on time. Kiddos love this too!

Gluten-Free Pasta Primavera
One 12-ounce bag of gluten-free penne pasta, such as Ancient Harvest
¼ cup olive oil
1 dash red pepper flakes
2 tablespoons garlic
1 cup (about 1 small) white onion, chopped
3 medium carrots, cut on the bias
½ cup broccoli, cut into ½-inch pieces
½ cup zucchini, cut on the bias
1 cup chicken bone broth
1 teaspoon salt
4 turns freshly ground black pepper
1 teaspoon fresh thyme, chopped
¼ cup sun-dried tomatoes, cut on the bias, such as Mediterranean Organic
¼ cup parmesan cheese
1. In a large pot of boiling, salted water, cook the pasta until al dente; drain.
2. Meanwhile, add the oil to a non-stick pan and heat over medium-high heat. Reduce the heat to medium and stir in the red pepper flakes and garlic; cook until the garlic is golden, about 2 minutes. Stir in the onion; cook until translucent, about 4 minutes. Add the carrot; cook for 2 minutes more, then stir in the broccoli and zucchini. Add the chicken broth, salt and pepper; cook for 5 minutes more. Stir in the thyme, sun-dried tomatoes and cooked pasta. To serve, top with the Parmesan cheese.
